CHOC PEANUT BUTTER BITES : recipe by Simone Kelly (Owner Get Raw Bootcamps)
2 cups almond meal
10 fresh moist medjool dates (pitts removed)
1 tsp vanilla extract or essence
10 tbsp 100% peanut butter
5 tbsp rice malt syrup or honey
pinch of pink salt
1/2 cup chocolate chip melts
1/3 cup crushed raw peanuts
In a food processor add almond meal, dates, vanilla, rice malt and pink salt.
Process until well combined.
Add in the peanut butter and process until a smooth consistency forms that is easy to roll similar to a dough.
If mixture seems too moist add an extra few tbsp of almond meal or if mixture seems too dry add a few drops of water! This will all depend on how moist the medjool dates were that you have used!
Line a small baking tray (approx 20cm x 20 cm) with baking paper then gently press the peanut butter mixture so it evenly covers the pan and press flat. Set aside.
Melt the chocolate (following packet instructions) and then smooth across the top of peanut mixture covering then sprinkle crushed peanuts on top.
Place tray flat in freezer to set for around 10 mins.
Remove from freezer and slice into 24 squares ( 6 x 6 rows)
Store in freezer for up to 2 months
Each slice is approximately 170 calories and makes a healthy high protein snack decadent treat that tastes truly AMAZING!!
