Lean Thai Pumpkin Soup Recipe

½ pumpkin diced
1 cup vegetable stock
1 cup water
1 tbsp preferred cooking oil
1 leek sliced (white part only)
3 cloves garlic crushed
1 onion chopped
2 carrots sliced
2 zucchini sliced
1 cup coconut milk
1 small red chilli diced and seeds removed
handful fresh coriander leaves
cracked pepper

Heat water and stock in a pot then add diced pumpkin and cook on medium temperature. Meanwhile sauté oil, leek, onion and garlic together in a small fry pan for 5 minutes. Add cooked leek, onion and garlic to pot with pumpkin, then also add the carrot, zucchini, coconut milk and chilli. Cook until pumpkin softens and then remove from heat. Pulse soup in processer with fresh coriander to make a puree and serve topped with cracked pepper.
