RAW CHOC PROTEIN TRUFFLES
1 ¼ cup almond meal
7 fresh medjool dates pitted (pre soaked)
1⁄4 cup raw cacao powder
2 tbsp coconut oil melted
1 tsp vanilla extract
3 tbsp chia seeds (coating)
dash pink salt
Make choc orange jaffa truffles add orange peel/rind, orange flavored stevia drops, orange oils or extract to taste OR choc mint truffles add fresh mint leaves, peppermint flavored stevia drops, peppermint oils or extract to taste.
Pre soak the dates, remove all excess moisture and pat dry. Process together the almond meal, dates, cacao powder, coconut, vanilla and salt until well combined. Check the consistency of the truffle mixture and if slightly too moist you may need to add an extra sprinkle of almond meal, or alternatively if truffles are too dry then simply add 2-3 drops water. Now you will need to add in any optional choc truffle ingredients from above such as orange or mint or simply enjoy chocolate protein truffles plain!
Roll into balls and coat in chia seeds.
Makes approx 10 balls @ 2 balls per serve
Great stored in individual snacks serves for easy lunchbox treats.
